I play an electric piano at home and I'm tired of having a cord interfere with the keyboard.  My keyboard has a standard 1/4" headphone jack and I'm looking for wireless headphones which will let me hear the full quality of my instrument.  Not terribly price sensitive, but my experience is that the price/quality goes non-linear at some point.

There are multiple offerings from Sennheiser. They start at $80 and go all the way up to $450. Are the more expensive ones worth the money? That depends on who you ask, but if I were to use it for your purpose, I'd at least go for the RS160 ($200). I'd always prefer listening before buying. Every headphone is different and everyone has different preferences after all.

Do you know if there are any issues with latency?  This is obviously not an issue listening to recorded music, but with live music, latency is very very annoying.

So it's a choice between sound quality and latency. As it's live music, you want little to no latency, so that means you'd be stuck with the RS 120 from Sennheiser or other radio frequency headphones.

They recommended the RS120, but that looks like a dated product so I'm digging further into the RS135 and RS 165.

I hope you end up getting the product you want. As far as I know, the current RS120 is a second generation of the model. Perhaps still a bit dated, but with headphones that isn't necessarily a bad thing. For example, I have owned the Sennheiser HD580 (twice!), which is over 20 years old, but it is still one of the best headphones under $300. It's not available new any more, but it's basically exactly the same as a HD600 with a different grill.
