why do sellers remove the selling price in their threads once the item has been sold?

Perhaps so a future seller doesn't feel pressured to adhere to pricing pressure from others who would say "Hey, so-and-so sold this for $195, why are you selling it for $215???"

It's not like many people make their living on the for sale forum. I'd just ignore anyone who wasn't offering to buy.
