Why do most headphones have recessed mid range?

  558's do not have a recessed mid-range, but yes they can come out as muddy sometimes. 
598's sound a little better than the 558's. 
 
 
I wish I could find a headphone that does bass and mids very well. 

 
 There are quite a few phones that do bass and mids very well. I can vouch for the V-Moda M80 and the Onkyo ES-FC300  doing very, very well with bass and mids for on-ear phones (with treble being good for the M80 and very good for the ES-FC300). For over-ears and for under $100, the ATH-M series, especially the M40X do quite well.

I've tried the M50 and the bass is loose.

M80 I tried them long ago but was impressed. m80 or Amperiors are in my radar for portables actually.

The M40 is tuned differently than the M50. It is EQed for a flatter FR. It might still not be to your taste, though.

Check out the Bang & Olfson H6, I have read great things.

I've seen them in the Apple store. I'll be sure to go and try them out next time.

I have had bad luck with demo'ing them. The demo is always broken with my luck.

Sorry to hear that. Sometimes I wonder if a broken demo indicates that the model isn't durable because some demo models always work wherever I find them (M100) and some never work (Parrot Zik). Have you found any similar consistencies in demo'ing?

Well I don't usually find the headphones broken but it's more that the demo rig broken and not the cans. I need to listen to the M100s again I found them overly sub-bassy last time.

Make sure you don't listen to them from the demo station at Brookstone.. supposedly it's modified to the point that it makes them sound bad.

well crap... that's exactly where I listened to them.  Guess I'll keep an eye out for another place that is demo'ing them.

Somebody said on the M-100 thread that if you ask them to open the box or get the actual straight 3.5mm plug from the demo, they should be able to do that for you.

I've listened at Brookstone from without a problem. I just reach in to their "rig," pull the headphone cable I want from their jacks, and plug it into my iPod.

Yea, if it's open. Depends on the Brookstone I guess.
