Depends how hot it gets.
If sweat is a daily problem, then get velour.
Sweat will ruin a leather ear pad very quickly due to the moisture, saltiness and acidity in sweat.
Velour, being synthetic, will resist those for much longer and be easily hand or mashine washable.
The next problem you havn't mentioned is the headphone.
Most closed-back headphones and planars will sound terrible with velour pads as the bass volume will disappear.
In that case, you should instead consider pleather (artificial leather/protein leather) pads.
Actually, I believe fenestrared sheepskin is cooler. The sheepskin seems to throw off heat, perhaps because of its relatively non-porous, but very supple texture. Velour, on the other hand, while comfortable in good conditions, will heat up quickly and soaks up moisture and oil from your ears. Over long listening sessions, this makes them hotter, IMHO.
Every time I reach for my headphones with the fenestrared sheepskin, they feel cool and refreshing on the ears.
