I'm looking for the ones that plug into the earphones themselves... I want to make my own canare starquad cables for them. Is it correct to assume that 1 of the plugs is signal where the other is ground in each side?

Do a search there is a lot of info on them in the DIY section. You have to buy a stock cable and use the plugs from that. Also, yes one pin is ground and the other is the channel.
