Brahms Clarinet Quintet (all his chamber music, for that matter. Oh, and the orchestral as well....)
Chopin
Franck (Check out the Piano Quintet or Violin Sonata!)
Scriabin!
Schubert String Quintet in C (NOT the Trout)

While i like most of the romantic area stuff (I still fear the 1812 due to an orchestra teacher who had cannon blanks during our performance of it, and didn't bother mentioning it to us, only to scare the hell out of everyone there), My favorate single piece would have to Barber's Adagio for strings. The piece is just so full of emotion and warmth, a truly moving piece.

This justly popular piece was written as the slow movement of his Op. 11 String Quartet. I much prefer that version; give it a try! Even if you end up preferring the big string orchestra, you'll love the quartet.
