I sold my Sr 225s on ebay due too my financial problems at the moment and specified that I would only ship to US and Canada however the winning bidder was from the UK. Should I stick to my guns and say no orders from outside of US and Canada or should I let this one slide? How much is priorty mail from Maine to the UK? Is it high?

If they're willing to pay the shipping, fine. If you indicated you were paying for shipping, in the ConUS, domestic bidders only, then he should not have bid. Offer to the second highest bidder.
