I absolutely agree. What Cash did with the American recordings was different than anything that any other country artist ever did.

I'm pretty fond of Aerosmith's album Honkin' On Bobo (all cover songs, most of which are very good), and Rage Against the Machine's cover of How I Could Just Kill A Man is amazing. The original Cypress Hill song is terrible. I can't even listen to it.

As ashamed as I am to say this, I also think Marilyn Manson did a remarkable cover of Tainted Love.

I love cover versions

I second to the already mentioned Tainted Love and Running Up That Hill.

Also:
Inactive Messiah - Beat it
Graveworm - I need a hero
Norther - Youth Gone Wild and Smash

also a bit of an odd number:
1200 Mics - High Paradise (has Fear of the Dark, Blues Brothers and others in it but it's not so much of a remix than an electronic remake)

The Dub Side of the Moon mentioned below is also great stuff!

Easy Star All-Stars: their cover of the entire Dark Side of the Moon album, and the OK Computer album.

Stunning.
