first thing i throw in is the entire cd Antithesis by Origin. If a headphone can make sense of that album, then i know it will stand up to all the metal that ill be throwing at it over the course of its life

Which of course will be followed by a needle drop of Stadium Arcadium, which is one of my favorite albums of all time

Sorry to resurrect a dead/dying thread but this is an interesting topic on which I wanted to comment. My Cowon j3 arrives today, with my ATH-m50s arriving tomorrow, and I was wondering what I should play through it; so I did a search and this thread is the most recent. =)

These would be done prior to burn-in, as I enjoy listening to my headphones "grow up." Most of these songs are well suited for the frequency response of the m50s which I one reason why I chose these songs rather than some from other genres.
 
After looking through the rest of this thread, head-fi has impeccable taste in music! There should be a head-fi radio station (lossless audio, of course).

For my 2 most recent headphones it's been "Tomorrowland 2010 - Various Artist (a mix)". It's an hour mix of the Tomorrowland 2010 event and it ranges from deep lows, tight bass kicks, electronica, various vocals, and yeah. It's a solid track to see where the headphone shines.

The first for me is usually Damien Rice - The Blower's Daughter.
 
It is well-recorded, features voice heavily, and has a range of instrumentation.  Acoustic guitar, strings, percussion with tapping on the guitar... it's a pretty delicate balance.
 
Early in the song, there is a paper rustling in the right channel, which you need detailed headphones to hear.  In the second verse, bass is added to the mix, and bloated bass really overwhelms the rest of the song, but headphones that bottom out early can't fully reproduce those low frequencies.

Well I wouldn't call it perfect... But very, very good for hearing the transient response, decay, and level of bass at 35-45 Hz and 60-70 Hz.  Systems that can't reproduce those 40 Hz beats well and at the appropriate level (relative to the higher harmonics) sure do reveal it.
 
Aeroplane by Björk is always my first track.  I know it inside and out, and it's covers almost every aspect of music that I find important.
Angel by Massive Attack often comes next.
Dazed and Confused by Led Zeppelin and the rest of these are some of my other favorites.
