The instrument that I love to hear most is a good slide guitar. But it's difficult for me to find bands that utilize it in a way that is appealing to me.

For me, I must say it's guitar, hands down. While I love pianos, and appreciate a great drum solo, as well as symphony music and orchestras, nothing beats great guitar playing IMO.
I have played the drums since I was 8 and mostly listen to metal. But man when I saw Joshua Redman live, his saxophone skills almost made me cream my pants
I really love to hear jazz and classical music snobs talk about how easy the guitar is to play. They place all other instruments in another level and the guitar at the bottom. They talk about the years of practice to refine the other "better" intruments. HAAA I still love the dirty electric guitar the most!
