I got the following headphones:
- Apple AirPods Max
- Sony WH1000XM5
- Sony WH1000XM3
- Bose NC700
- Apple AirPods Pro 2
- Sennheiser Momentum True Wireless 3

But none of these headphones make me deaf. I can still hear my surrounding without music playing.

Any recommendation on what to buy in order to be deaf?

Earplugs plus an over ear hearing protector.

Ok, maybe I should add that it should look fine also in public :p
They make slim ones that cut over 30db. Plus earplugs can do another +30db. So 60-70+.

But look fine in public? You wouldn't be able to hear cars or people yelling at you.

Buy a JM Audio XTC and play it at max volume for an hour or two on any headphone amp ever. Guaranteed deafness. In all seriousness, if the Sony didn't do it for you, keep music playing - they're supposed to be the best noise canceling out there. I do find the T+A Solitaire T noise canceling to be excellent, but I don't think it'll be better than the Sony. Maybe just stop going out in public?

Wireless are tuned for battery life, not loud volume levels. You have to go wired to get any louder than what you have. Noise cancelling on those should do the job though. Ditch the wireless. It won't be deaf, when you hit 45-50 and the Tinnitus makes a ringing sound 24 hours a day and there's no cure, that'll be a lot worse than being deaf and not hearing anything.

Etymotic ER series has a lot of passive isolation.

I'm assuming you mean that you want to completely block outside noises, not that you literally want to be deaf?
The problem with both IEMs and ANC is that neither blocks the entire frequency range equally. ANC mostly blocks the lower and mid frequencies, IEMs typically mostly block mid and upper frequencies.

I've used IEMs under a pair of cheap ANC headphones to more or less block all noise on an airplane, both the engine and wind drone as well as the kid shrieking behind me. The trick is probably in finding headphones that don't press on you ears too much, and IEMs that are flush with the outer ear.

Probably nothing works a lot better than a set of Etymotic - with the right tips (double or triple flange) deeply inserted (land's end) and a pair of those 3M suckers (~-30dB) on top:

I travel a darn lot and my trusty Etymotic ER4XR have helped me to stay sane uncountable times - the other Ety series though (ER2.., ER3.., ...) work just as fine in that regard.

The recommendation for the Etymōtic ER4SR or ER4XR with foam tips is very good and it has class-leading noise isolation. If you simply need ear plugs, the 3M E-A-Rsoft SuperFit Earplugs 312-1256 are the on extreme end of noise isolation and they’re the best 3M has to offer. The 3M earplugs have been my pick when I'm running out patience.

That's a crude way to put it but maybe the Shure adaptor + SE535/ 846/ any other. Though for totally no sound, you gotta play some music on those.
