When I listen to music through itunes>fiio e7>Denon 2000s I notice that I can control the volume through the volume bar in itunes (though not through my computer volume slider, because that is all bypassed because of my DAC/AMP.)

But what level should I put the itunes slider at?  I figure I should keep it at one volume (like 75%) and control volume through my amp.  I feel like the volume slider in itunes might cause distortion.

Keep it at 100%, that will send out the signal unchanged.

Thanks, that's exactly what I wanted to know.  But why does itunes have any control over the volume?  I thought all computer volume was bypassed because of the usb connection to the fiio e7.  I figured it was data signal only?

It simply changes the volume of the decoded data, it's a "software" volume control, like an equaliser.(or the pc wav volume). Sound check also does the same thing, although automatically. And the enhancer is equaliser+ stereo widening. You should probably have them turned off.
