I find the usb-c connection to my phone/tablet a bit finicky and fragile. If it gets bumped even lightly it often loses the connection. Are there any dongles or cable that's a bit more robust that can take a little more abuse or is Bluetooth the only way to go?

Which dongle and is your cable or your phone's port worn from charging?
It's some old amazon dongle that i bought years ago when when they stopped putting headphone jacks in phones and tablets. I don't doubt there's wear to the usbc ports too as the devices are over a year old.
I guess this is a more general question because usbc seems less robust than 3.5mm headphone jacks.

You can try another USB cable if it's detachable from that dongle.
If you go with a completely new dongle, just know that some have proprietary USB C cables, meaning they look the same, but if you try a generic cable, it might not work.
I used to have a phone where the charge port wore out, and it would frequently disconnect during data transfers or bumps. After that, I charge everything wirelessly and rarely plug in.

I see there are some magnetic usb c adapters. Anyone tried them?
I use a solid c-to-c connecter and haven't had any issue with failure.
Another suggestion is something like this to attach it to phone

For on the go use BT is a better option than disaster waiting to happen USB, plus you don't have to deal with UAPP quirky UI.
And yes, magnetic adapters work and can save phone jack from wearing out.

I got some magnetic adapters and so far so good. Most of my charging cable connectors start to wear out after a few years as well. Hopefully the magnetic adapters will last.
