So I'm currently using a Sennheiser HD 598 and I'm thinking of getting a more audiophile-grade set of headphones. I'm currently looking at beyerdynamics like the dt880 or dt990. The problem is I'm not sure what all the difference is between the Pro, Premium, 32ohm, 250ohm, and 600ohm versions are.

For instance:
Beyerdynamic DT990 Pro 250Ohm = $175
Beyerdynamic DT990 Premium 250Ohm = $310
Beyerdynamic DT990 Premium 32Ohm = $350
Beyerdynamic DT990 Premium 600Ohm = $380.

Now I know theoretically the difference in impedances, but I'm just wondering what the difference between all the headphones are. The cheaper Pros appear to have a slightly difference build than the others. The DT880s appear to have a similar price divide situation between the DT880-Pro-250Ohm and their 250Ohm and 600Ohm Premiums, but they appear to be built more or less the same.

From what I understand the DT880 series is very neutral and accurate, while the DT990 series is more colorful and "fun." I'm not sure which I want more, because I certainly want accurate representation, but I don't want the music to be so neutral that it's bland and lifeless. Considering the Sennheiser HD 598s I have now are sort of in the latter category, I've been leaning towards the DT990s. I've also been looking at the AKG K712's, but they seem to be famous for being painfully neutral.

Any other thoughts and suggestions would help. Don't worry about whether or not I can drive them, even up to 600Ohms, I'm also in the market and considering a Modi 2/Magni 2 combo.

The DT 880 is the former Beyer flagship.  See:

Also take a look at the AKG K 7xx--the best $200 can I have yet heard.

Thanks for the general info on the DT880, but the second article actually managed to make a far more complicated metaphor for explaining impedance than simply learning about electric resistors.
Also, where are you finding $200 AKG K7xx series headphones? The K701, K702, and K712 are all well over $300 at least on Amazon.

Through various drops at Massdrop.  There is at least one very long thread on this can and its release here.

If you're outside the USA, I'm not sure about availability.

Well that's interesting and I'll check it out a bit.
But I'm mostly still looking for information on the headphones. Ceteris peribus, would the highest impedance model of Premium DT880 or DT990s be best if properly driven? Your linked article seemed to say so, but I found a lot of issues with the author's tone that made it seem like he liked them for being "better" and that they were "better" because he liked them. Kind of reminded me of a wine snob in that regard.

Mostly, I'm just looking for something non-Sennheiser (I have two Sennheiser sets already, I want to branch), around the HD 650 quality mark. I listen to classical, operatic classical, rock, punk, metal, electronic, and to top it off, video game soundtracks (which correctly implies I'll be using them for video games!) Now I'm taking another hard look at the DT880's because they seem to try to offer the widest range of sound signatures for variegated tastes depending on the amp you drive it with.
