For my work setup I'm going to pair my iPod touch 6th gen with Sony SBH80s. The source will be a streaming music service. I know that normal Bluetooth 4.0 will degrade my audio quality and aptX a bit less. Will Bluetooth's bit rate be lower than what I receive from Tidal HIFI? In my scenario would the premium tier be wasted?

On a side note can anyone confirm if the iPod Touch 6th gen has AptX? The only thing i can find is BT 4.0.

This might help:

Tidal HiFi streams at 1411 kbps flac:

Bottom line, using Tidal HiFi over Bluetooth will mean you're going to lose some quality. Will you notice it? That depends on your ears and environment, I would imagine.
