I already know most of what is mentioned in that wiki, but thanks for the offer.

I was looking for some more in depth technical (and mathematical) understanding of the process.
I've got a couple books on DSP in my digital library now, and I'll try to see if I can follow any of it after I'm done with studying my current book (Physiology of hearing).

Here's another paper I found to be very readable regarding ADCs and DACs:

It's specific to a particular IC, but has a lot of good, and fairly concise, information about decimation and filtering.
