Whilst going through my grandparents house I found a vintage Sansui 7070 in excellent working condition and some real nice speakers as well. My sweet grandmother was kind enough to let me take it back to my college apartment. :D

(Phono in is covered by those plugs and is to the right of GND and above TAPE-1)

My setup would go

Computer > Standalone DAC > Sansui 7070 - Phono in > AKG 701 | Speakers | ATH-A900

Now I understand that phono is uses low voltages, but how low are we talking about? Would a DAC that outputs about maximum 1.5V RMS overload phono in?
Should I use TAPE-1 or AUX instead?

Yes, a phono specific input uses a RIAA filter which is a standardized filter (EQ setting I guess?) for use with turn tables. Don't ask me for a much better explanation than that though.. Suffice to say, it won't sound right any other source or DAC. So yah, use the AUX.
