Using MacBookPro 2016.
Sound out thru USB-C - what to choose?

1. USB-C connected to iFi idsd black (to HIFIMAN Edition X V2)
2. USB-C to 3.5 headphone jack (to IEM JVC HA-FDX1)

44.1kHz, 48 kHz or 96 kHz?

Mostly listen to Tidal Hifi, some FLAC-files and more seldom SACD.

What option to choose for me to get best sound?
Or is it automatic fix in some way?

CD-Audio is 16-bit/44.1k, I sure most or all music streaming services have no need to offer music above 16-bit/44.1K.
What is your budget for a USB DAC/amp?

You don't need to mess with these settings, your playback software will automatically adjust for you. All you need to do is plug your iFi and ensure it is recognized.
The AudioMidi settings you have a screenshot of are only to be used if you want to override Core Audio from adapting sample rate to match the audio file. Which you should not do, basically will mess up files encoded in 16/44.
