Does the SRH550DJ get loud?

Loud is a subjective concept and it is also about what source you are planning to use them with.

If I used it with an iDevice, would it be loud enough to block out outside noise?

Well this is also a subjective question and result will vary subject to noise coming from outside but I think it will be able to block the outside noise to a good level. If you want to completely block the outside noise you need something with active noise cancellation.

Sound is really subjective issue and I suggest you to try them before buying them. Also I highly suggest you to try AKG K167 as well. Then you can make a decision. Personally if I decided to buy SHR550DJ I would rather save up a bit more and buy a SHR750DJ instead.

Imo no closed headphones have a good soundstage. For a good soundstage you need something very open, like a Sennheiser HD598.
