Yeah, rushed decisions are no good. You can't even get a minimal scope of all the frequences in 10 seconds.
But the rest of the post I can also agree on.

I think carefully choosing test tracks and trying to pay close attention to them, and also not taking long breaks between headphone swaps should help to hear the difference.

I didn't say I fully understand all the characteristic of a headphone in 5-10 seconds, merely that I know if I would LIKE it nor not. I always use a short list of tracks/songs I'm extremely familiar with. 

I don't think it takes much longer to know if the sound is your 'taste' or not - naturally the finer details come later which I fully agree with.
I don't think anyone can claim to fully understand a headphone in such a short time span.
