When I first started working on my amp over the holdiays I got 3 of the EVJ 10k pots to evaluate (they are cheap, so why not). They all used most of their +-20% range and had large differences between the two elements. The best was 1.5k apart at 10K and the worst was 8.6k for one element and 11.2k for the other.

Some of the past threads on EVJ replacements mention the Bourns 51, but they are hard to find in small quantities. When I looked through Newark, the audio taper ones had minimum orders of 50 to 500. A 5% cermet dual audio taper pot would be nice, but I'm not about to spring for 50 of them! Amidst all the possible configurations, I spotted one (+-20%, conductive plastic, dual audio) available in qty 5. Five at $9 each is no hardship and I can always use them in other projects, so I placed an order. Three months later (order placed in Jan, arrived yesterday) my five custom 51-series 10K pots have arrived.

Here are resistance readings for each element:

Pot 1 10.35k, 9.65k
Pot 2 9.94k, 9.81k
Pot 3 9.79k, 9.76k
Pot 4 9.96k, 9.52k
Pot 5 10.41k, 9.88k

Either I got very lucky, or they are being very conservative with their +-20% rating. All five pots met a +-5% tolerance on each element. The difference between the two elements was <7% for all.

I hope to get #3 installed in my amp this weekend.

The 20% rating applies to the entire swing of the pot, not just the final value. Indeed you may still be lucky. Or you may just have measured at the right spot.

Just hope there isn't a horrible mismatch right at the volume position you normally listen to music
