I was told by a salesperson in a headphone specialty store in Taipei that the D5000 will probably remedy all the things I don't like about the D7000, such as the mids being recessed and the treble being a little too sharp/bright sometimes, while the bass is mostly the same (which I love about the D7000). I'm wondering if that's really true, since most people have commented that they have a hard time telling the two apart, and if the mids and treble on the D5000 are indeed that different (enough to "remedy" the shortcoming of the D7000 for me), then it should be easy to tell the difference? Or maybe the answer for me isn't downgrading to the D5000 but look at another brand/model altogether, such as Edition 8, DX1000, or maybe the LCD2?

I actually think that the D7000 supposed to be better in the sibilance issue and the bass a little tighter than the D5000,at least from what i read. they supposed to fix the D5000 and not the opposite.
IMHO you better stay with the D7000 if you still want the denon sound,or just sell and get another headphone with different signature.  the D5000 are definitely not going to fix those problems.
by the way...if you want to trade the D7000 for my D5000 i don't mind!

For me personally, the D7000s were a significant step up from the D5000s. I am not quite sure you will get the changes you are looking for with the D5000s and may also lose out on much of what you like.
 
All those options you mentioned may be very good choices; T1s, HE-5LEs too. Also, the complaints you have are not uncommon and using MarkL mods and/or JMoney pads has satisfied some with similar issues.
 
I pretty much like them as they are though. I have tried an awful lot of other models that I like better in some areas but none really offer the same kind of bass as the D7000s. For a significant portion of my music, they just seem perfect.

If you found out the D7000 is "mids being recessed and the treble being a little too sharp/bright sometimes, while the bass is mostly the same", I think that is obviously D7000 is not well amplified.  Compare with D5000, D7000 will be more neutral and balanced, and SQ just a step ahead of D5000 in nearly every aspect.  D5000 may be a bit more bass, and can be used in a more budgeted equipments.

I am burning in a new pair of AHD7000. So far I find the mids very slightly recessed. Not a bad thing. The tremble IMHO isnot egy or bright. Still haven't opened up so I am not sure if they are worth the money. I am going to another Head flier house today and taking my gear. I wikk kisten to the He5 LE to see if I like the Planar. My amp is the Matrix M Stage . Hoping the amp can power them. They power my 701 and the 7000 I had to lower gain. I have a 30 day return policy.

It depends how much you paid for them. If you paid in the $600 to $700 range IMO they are well worth the money. You need to let them burn in for over 250 hours at least and I will recommend you to add the JMoney ear pads. They are not only more comfortable and make the D7000 fit better but they also improve the sound specially bringing the mids a little forward.

Not sure about the salesperson you spoke with, but I found from comparing the D7000 to D5000 that downgrading to the D5000 would be a huge step down. They are just in a different class, whereas the D5000 and D2000 are in a similar class.
In addition, I agree with musicman59 that at the $600-$700 price point your better off just keeping them and letting them burn in properly

I don't know the D7000, but the D5000 still has recessed mids. Might not be as bad with good amplification, since the headphone 'clears up' a bit (instrument separation and soundstage), but I'm not sure if the it'll be a savior for your woes. I'd start looking at those other headphones, and don't forget the mid/high end Audio Technicas (ESW10JPN, W1000X, A2000X etc...)

+1 for the Jmoney pads or markl mod. The pads might be the easiest fix, and you wouldn't have to open them up. Easiest thing to try would be to stuff the stocks pads if you don't feel like getting the Jmoney pads.

I own both and would disagree with the salesperson on two counts.  After extensively comparing them with more revealing tracks, I found that the D5000 have more recessed mids (voice, guitar) and looser bass.  For example listening to Heads Up by Death from Above the double kick drum sounds clear with the D7000 but sounds like distant thunder with the D5000.  However the D7000 do have more treble.  That bothered me at first and I only listened to them with my warmest tubes, but they seem to have tamed somewhat and I now listen to them with even my brightest tubes. Comparing the two now the D7000 are still brighter overall than the D5000.
 
If it still bothered me, the brighter signature of the D7000 could be remedied with tube/opamp rolling or equalization.  But don't think that the flaws of the D5000 could be similarly compensated and for that reason I never listen to them any more.

I tested the D7000 with the Corda Symphony.2 amp today, plus a bunch of other high-end headphones, including the Stax 007MKII. I also tested the D7000 against the D5000 as well. Reviews and comparisons are here:
