How low in the Sennheiser line can I go and still get an idea of the Sennheiser house sound???
EDIT:
I'd prefer to do this unamped, so keep that in mind.

Ide have to recommend the HD555s if you want a taste of the Senn sound. They are 50ohm and should be just fine unamped and retail at about $150 but can be found used for around $90ish.

PX100. Grab a pair for around $20. Definately give you a taste of the Sennheiser. Gives a detailed, full sound as well as good bass. Very good starting point. If you want to start a little higher, try the HD497. Also very good for it's price (sub $100). Wanna go higher? HD555. After that, you're going high-end where there are just so many choices.

HOWEVER, considering your previous experience with headphones, I don't think you'll be satisfied with anything lower than a pair of HD497.

The old Sennheiser sound was mellow and smooth: the lowest
Sennheisers that have that sound are the old (copper voice coil) PX100, the current MX400/500, and the HD25SP.

The new Sennheiser sound is clear and brighter: the lowest Sennheisers that have this sound are the new (aluminum clad voice coil) PX100/200, and the current PX10, MX450/550. (most people cannot get bass out of the MX450/550).

The HD555 is mellow/smooth but a bit more forward. The HD595
is bighter and a bit more forward. The HD580 is the classic mellow and
smooth sound. The HD485 is mellow but might be too bassy for most people.

The EH350 is an improved HD497 and is relatively flat but more extended sounding.

So it sounds like the eh350 is a pretty good bet. I think I'll buy it later once my wallet stops burning from my recent e4g/hd201 purchases and eBay broken karma fiasco.

Really? I find the opposite. I was hoping they'd be a bit more forward sounding.
