IEMs is probably more suitable than full-sized. It's troublesome to carry a pair of big and expensive headphones around while you can just put iems in your pocket. Noise isolation and leakage are better too.

And can I ask what IEMs have you tried before? IEMs vary greatly in terms of comfort, so I don't think it's fair for you to think that all IEMs will make your ears itch.

Anyway the Denons's bass will certainly be a bit too boomy for many metal songs, but on the flip side you get some awesome head rattling action. Just stay away from the HD595, it sucks.

It might be a possible option. Its bass is top notch and while I dislike the HFI 780 mids many people like them for metal (not me). But don't expect to be able to wear it for hours, its comfort isn't that much better than the Grados.

If you really don't want people around you to hear what you are listening to then IMHO pick up some IEMs. I used to have HD595s and they bleed sound like crazy, but thats the nature of that type of headphones.

Reading the thread, I would say denons are your best bet. Get the D2000's, and you could upgrade them later if you like
