That brisket should make a Texan envious!
One thing I'll have to give to Texas: it's steak country. Not that you can't get great steaks elsewhere, just that in TX a bad steak is almost an oxymoron. :smile:

Did I say that? Dang. And I haven't even hit the Buffalo Trace yet. Perhaps this memory/old age correlation I read about somewhere (just can't remember where) is real? 🤣
Finnegan and I spent part of our day figuring how many bottles would fit on a shelf including some from Buffalo Trace distillery. Working with barrel staves is challenging but just part of the build. IMG_7419.jpegIMG_7423.jpeg

And so it begins. Very soon, NC BBQ will be but a faint, unpleasant, memory.
Let the pleasant wisps of hickory smoke wash over you as you start to imagine the glorious smoke ring and the truth will become clear.

I have backup EH Taylor as well but the bottles are tall and skinny so I only wanted to use one.😁 Finnegan was probably helping himself to the BT.IMG_7420.jpeg

You could save a lot of time and effort by just dumping them into one container.
