Preferment. Strong flours like spelt are great for preferment. It's crazy what a difference it makes, especially for taste!
Just a follow up on what to do after one got the final dough from the preferment:

If you want bubbles, oil your fingers before pounding the dough and don't touch the outer rim.

URD news: I heard the same "metallic screeching" noise a few other folks have experienced on a disc this morning. It happened three times on the disc, 20 seconds or so then it faded out. First I have heard it, the first time was terrifying! Another disc now playing does not have this noise. Could it be something about the disc interfacing with the Unison USB? Very weird!

I haven't been able to get anything that I'd call "metallic screeching". I did finally find a disc that it won't read, which is one that my old Onkyo changer also wouldn't read, and that it would only kinda sorta read after resurfacing it with a Skip Dr., which left the typical radial haze lines on the surface. The Urd struggles way more with the resurfaced CD than the Onkyo does, but that disc also doesn't play right in anything I have. I am going to try to polish it up with some Polywatch and a Dremel with a string buffer attachment on it when I have time, but my assumption has been for a while that the CD itself is just toast.

I dont have an URD ( yet !! ) BUT I've had exactly the same issue with particular discs - Jean Michel Jarre - Aero and Yes Tormato -both play great and sound fab with my old Arcam cd /dvd player , but if I try to play or Rip using a computer type cd drive all I get is screeches through the speakers -both play on my Cambridge audio transport but will not flag up any bit/sample data info on the display - every other disc I own does fine ??

I've played 25-30 CDs through Urd connected to Yggy via USB and haven't heard any screeching. Just another data point.
For those who have had issues, does the issue occur only via usb or it repeatable using S/Pdif?

Are the CD's in question Enhanced CD's? Do they contain any Rom data?

Old vintage CD players, would try and play any track on a disc, even if it wasn't CD-Audio. They could play Rom data, which would definitely cause a loud "metallic screeching" sound. Once heard, never forgotten. So, I wonder if the URD is randomly misinterpreting audio content as Rom?

Happy with my Urd so far with one slight quirk, although not the Urd's fault! USB out plays fine via the Topping D10 balanced dac. However, it won't play nice with the Fiio R7 usb dac input. Any advice would be welcome. I've tried using various cables to no avail. The Fiio R7 is UCA2 compliant.

Sony adds noise to files when ripped on a computer

The other day I Googled Schiit Mjolnir 3 and found a link to what appeared to be the Schiit Website for a Mjolnir 3
owner's manual. Strange that I could not actually find it on the main Schitt Website. However, this manual
shows illustrations of the Mjolnir 3 and describes its class A architecture and how hot the unit runs. It actually looks a lot
like the Mjolnir 1.
The manual also talks about the M3 having the ability to run in two different modes: single ended for pure Class A purity, or push pull for 4x the power. Looks like a neat headphone amp! I have Schiit Asgard 2's which are also Class A bias, and they get hot enough to fry an egg on.

Will there be any new preamps on the horizon. Specifically, an upgrade of the Freya S?
I did hear Jason mention a potential upgrade to Freya S coming. I am interested. A very good preamp for the price but room for improvement. I do not mind a power switch on the back so much but the Freya S is deep in the back and very difficult to reach when in a rack. Just do what is done with the Tyr amps with standby and button on front. I also believe sonics could be better with the Freya S. Willing to pay considerably more for it for better sonics. I am confident the value will be there.
