I desperately miss Indian food (and other ethnic styles as well, including most Italian.) About 30 years ago I developed a severe garlic allergy. Now, if I even walk into a restaurant serving garlic-heavy food I get a bad migraine. It really sucks as I love garlic and foods made with it. My culinary life has become very bland - but it has forced me to become a pretty decent cook and I am always looking for good garlic-free recipes.
Wow. My (and my wife’s) condolences. We’re 100% the “other” way; we both hated, despised, (allergic?) to onions before we met, but loved garlic… met her and was like, you HATE onions and love Garlic?… we were literally engaged 6 weeks later… going on 33 years now. But, EITHER way, I hear ya’ (I wish I could tolerate onions, because I know I am missing something). Explore substitutes nearby in the “family” (i.e maybe it’s species specific?).
Completely separately, have you tried (or made) black garlic? Can you handle shallots?

Across my “street” is my neighbors cattle farm. Let us say prefer non southerly winds starting April. That said, 1/2 of one of them is mine (and Bismarck’s) every year. We both get very friendly come Autumn, but not like naming. Well, not me anyways… he’s royalty, so who knows if he’s at that next level of communications?)
I grew up in a L.I. suburb, twenty minutes (with no traffic) from the Midtown Tunnel. In my early years, there were still a couple of small dairy farms close by (one blocks away) from which we would get fresh bottled milk (with the cream on top) delivered every morning. My brother and I would sometimes fight (verbally) over who got the cream. Store bought milk is a pale imitation of the real thing.
I live in fear of developing a food allergy (well, okay, not in active fear maybe). I'm terrified of contracting Lyme disease and not being able to eat meat, or dairy. Now you're telling me that I can develop a bloomin' GARLIC allergy?!? That would really suck.
I contracted Lyme in '21. It took about 15 months to ID. It accelerated gout, and joint issues, and made me sensitive to drugs that cause edema - but I just ate a pile of BBQ today and enjoy dairy every day too. Its hard to predict which way Lyme will go, best to avoid.
For me, the tick got on my forearm, and bit me within a second, and I killed it at once. I waited for weeks and then months for the halo, it never came. Found out later a single dose of antibiotics could have done away with it.

Ha, apropos to that today had BBQ at a very good spot - Northeast Smokehouse in Billerica Ma. Meats very good, sides good. This is the 2nd best spot in Mass after BT's Smokehouse in Sturbridge. Here was a sign I took a snap of:
