Was wondering if this is possible, as the Modi and Magni both have awfully bright LEDs in them, and the Modi's can't be turned off. Would it be crazy for me to imagine soldering new, dimmer LEDs in?

Put a small piece od tape over it. Or a small piece of translucent plastic from a milk container.
If you have the skills, you can add a resistor in series with the led to dim it.

I thought of this, but wondered if there was a more elegant solution.

The resistor should be elegant enough. There's probably one already in series with the LED to limit the current. Adding an additional resistor would further reduce the current, dim the LED and void your warranty.
