I'm looking into cabling a guitar cable for a buddy of mine but I'm not quite sure how to do a mono signal. Since guitar cables only have one signal, to I not do the ground or.....I'm confused

You need a coax cable, the inner conductor will be the signal (tip) and the shield will be the ground (sleeve).

Looks to me like the instructions that you posted explain it better than I could have... Like bmw said above, you're going to use a coax cable which will only have one conductor, and a sleeve/shield. Then you just solder them in as the picture shows.
