For a fully balanced DAC with XLR interconnects to a fully balanced headphone amp, is there any benefit using a balanced AES/EBU cable between my CD Transport and DAC. I have always used digital RCA to RCA. But never had balanced gear before.

Your system is already fully balanced. Connection between transport and DAC is an independent matter but yes, if you have AES/EBU output on your transport, it is better to use it.
