I'm going to stack 2 buffers on the right/left channels and just leave the ground at 1.
I just want to check that I have this right, 100ohm right/left channel and leave at 200ohm for ground channel.

That will work fine. If you are using battery power you should note the buffers will be a bit power hungry with this bandwidth.
