Which genre? As for jazz, Keith Jarret's "Köln Concert" is great and also one of his most accessible solo concerts. Bill Evans' "Alone" is another solo piano masterpiece.

Murray Perahia's recording of Bach's Goldberg Variations and Till Fellner's recording of the Well Tempered Clavier Book 1 are favorites. Also, any of Claudio Arrau's recordings of Chopin and Leif Ove Andsnes' recordings of Schubert Sonatas are particularly good.

For Jazz, try Bill Evans. Everything he did was pure genius.

Try Godowsky The Complete Studies on Chopin's Etudes with Marc-Andre Hamelin at the piano.
