When shooting in RAW, you get all the information from the CCD directly. There is no processing done. This is a good thing because, once you "bake in" the contrast, gamma etc, there is no going back. Also Jpeg compression is lossy.

Most single sensor cameras each pixel captures only one of the color components B or G or R. This is called a bayer pattern.
The camera's processing unit creates the 3 colors for each pixel by interpolating neighboring values. The wikipedia entry explains it well.

The De-mosaic process (to get RGB for each pixel) depends on the algorithm used. There is a speed - complexity trade off.

The Jpeg image you get is the raw image Demosaiced, color adjusted and compressed.
