Which one is the best and what bitrate should I use to get a CD quality. Is 320kbps an overkill?

CD quality is not possible with MP3, but most find --alt-preset standard (or --alt-preset fast standard) with the LAME encoder, good enough. See forums at HydrogenAudio for more info.
