There are probably others that work for me, but one that has been a favourite of mine for a long time is The Swoon Collection 2:

It's a compilation by the ABC (Australian one). It is a great listen when I feel like some easy, relaxing music. I haven't listened to it in quite a while, I should put it on more often.

Prob not so well known but this is a great album to read to/fall asleep to/stare out of train windows

Sarah Brightmans' La Luna. My parents used to play it a lot when I was a kid, so it brings back a lot of memories.
