Can the distortion from low bitrate stuff damage your headphones/speakers?

No, only distortion caused by excessive volume or clipping. The bite rate itself is unimportant.

Does clipping caused by the amp being overdriven damage the headphones themselves? If not, does overdriving the amp cause damage to the amp itself?

Initially the headphones, but run an amp at max power for a long time and you could damage it as well due to excessive heat.

64kps mp3 sounds horrid, but amazingly 64kps vorbis still sounds great.

Exactly, we look at bit rates too much and codec not enough. 320kbps Ogg Vorbis streamed on Spotify premium sounds as good as and at times better, with a fuller sound than Apple Lossless.
