I know they aren't lossless, but sometimes there are songs that I want that I can't easily get a lossless copy of. Google is 320kbps, itunes is 256, so would google automatically be a bit better or are there any factors that make iTunes better? I know the difference would be indiscernible, but hey may as well get the better one!

Pretty difficult and I tried 256kbps and 320kbps and I had pretty hard times to judge which are good becayse they both sound....good! It depends on the price and the music they're providing.

iTunes uses aac (advanced audio coding) which is suppose to be the successor to mp3 and include some audio performance improvements. I recall reading comments that many consider 256 AAC files to be "equivalent" to 320 mp3 files. I have both in my collection and can't tell the difference.
