I was wondering if IEMs with Mics attached that have TRRS plugs would work in non-phone jacks of TRS variant?

I can see how TRS plug into a TRRS jack would be fine as the mic and ground would both be shorted together. But I'm not sure how the TRRS plug into TRS jack would work out.

Yes, that final R will just go to ground and you'll be fine .
