I have decided to get a DAC and use a computer running windows as the transport so I can use FB2K. I have never really used winodows much so I don't know if I can do what I want to do, or how to do it so here it goes.

I want to only have music go through the digital output and have all other sounds the computer wants or needs to make go to the speakers, which I would plug into the analog line out. If I can't do this, is there a way to give FB2k complete control over the sound so I get no interruptions when I am using it?

every PC has some onboard soundcard, set it as a default device, windows and any other programs will play through this onboard to your speakers or such.. in foobar, you can select whatever soundcard and output type you want, completely independent on windoze's default, this way you're getting no interruptions at all..
