It's about 20 years old. I know nothing about amps and just wondering how this one stacks up to current amps. Couldn't find much online about it, but here's what it says on the front of the amp:

Fisher CA 857
100 Watt TS-Per-Channel Minimum RMS power into 8 ohms, 20hz-20khz, with no more than 0.09% total harmonic distortion
5-band graphic equalizer: 63hz, 250hz, 1khz, 4khz, 16khz

I'm thinking about running a pair of Grado 225's through it, just wondering what kind of quality I'd get.

Total junk! mid 80's was a sad time for midFi. I think it was around 1971 that the last good fisher was made.

Why don't you give it a shot and find out for yourself?

That said, that's a speaker amp you found. It's unlikely the headphone out is comparable to a dedicated headphone amp (which is the case with nearly speaker amps and receivers), but like I said, give it a shot. It can't hurt.
