Is it possible to simply swap out the op amps to Muses 01's to upgrade to the 'new' Muses edition?   If so, which op-amps do I replace?  Which sockets?  Do I have to replace ALL op amps to new Muses?  They are pricey!

Yes.
 
You need to swap 6 op amps in I/V (4) and LPF (2) sections. 
 
The images of sockets are given in the booklet inside the box and also available online.
 
There are plenty of op amps to choose. But most members who have used muses01 say that other op amps cannot match the sound quality of muses. 
 
For the rest of sections, stock can serve the purpose.
