How to know the sampling resolution if equipment does not have panel for that?

I used foobar2000 to play FLAC music. At the bottom of the software the status bar always display 44100 Hz though the kbps may change. for FLAC files they are in 600-1000 kbps range. For Mp3 files they are 320 kbps at which I ripped the CDs.
 
I see 44100 Hz all the time for all format of music with all DAC/AMP I have, no matter which input I use, Optical, Coaxial, USB or Analog. I used NuForce iCon HDP and Sennheiser HDVD 800.
 
I guess I did not get the really good sound, right?
 
How could I reach the 192 KHz?

My stance on the issue: Don't worry about it. Because Red Book (16-bit / 44.1 kHz) is just as good as hi-res as far as anything human ears can hear. Others can tell you how to change the settings on your computer to 24-bit, but I personally wouldn't bother with it, especially if all you have are CD rips, since CDs are 16-bit / 44.1 kHz anyway.
