Well they have the Rockbox Bootloader that lets you switch between Rockbox and the standard iPod firmware by pressing "Rewind" as you startup, and they also have the iPodLinux "Loader 2.4" that provides a nice looking menu at startup that lets you switch between any firmware.

Rockbox will only install if you have a good Apple bootloader.
That means you can always dual boot by pressing Select + Play buttons during iPod boot up - this will load Apple OS

No, pressing Select + Play will put the iPod into disk mode. To boot into the Apple firmware, press and hold Menu as the player boots.
