How much difference does an amp's transformer make really?

I'm trying to decide between a few DIY amp kits - one uses a sealed toroidal transformer, the other a wound circular type (the technical name of which I don't know.) What practical differences would the more expensive sealed type have over the other if any?

If they're close to the signal path you may hear a slight hum with sensitive headphones. The one on the right is probably a Talema. They tend to be lower noise. If they're lower noise, the hum will be quieter. Though I'd recommend not having the transformer inside the amp and using a power brick to eliminate it completely. Even the Talema low noise ones can produce enough hum to be audible over IEMs.

Edit : Actually your picture looks like a copy of a Talema.
