I think there is not prefect headphone - sorry I think most of them agree with it.
So instead of "if you only can own one which one you..." should we talk about what the perfect phone set you should have base on your music interest?

Something like HD580+HD650+denon D2000+? will be a prefect phone set if your music interest are classics, jazz, etc.

The ones I currently have.
Stax 4070 -> For sound isolation.
AKG K1000 -> For live/acoustic records (sound stage).
Stax SR-007BL -> For the rest.

Most mere mortals have to settle for a lesser jack of all trades. My current jack of all trades is HD650's. For Jazz and such the 600's might be better but then so would the AKG701's with the right amp and source.

The only real way to know is to try out as many as you can with music that you like using similar gear to play that music back with...to get a ball park idea at least.

The AKG house sound tends to be flat freq response from 20 to 20k hz with a lean quality to the bass and rather sterile presentation. The Sennheisers are more lively in comparison. The Denons and others I don't know much about since I only have Sennheiser and AKG cans...

It's a start though....

Sorry for the paltry info

It takes a while, and you'll have to try out a lot of models, but eventually you can find the right pile of 20 or 30 pair of headphones that cover all possibie needs.
