Hello, I'm relatively new to the audio scene so excuse my ignorance, i am wondering what dac and amp pair well with Hifiman Sundaras..

I have had my eye on a topping d30 and looking into hybrid tube amps, from what I've incured tube amps aren't really necessary for planars, but isn't something to completely rule out. Then others say hybrids work well i do want a tube amp for aesthetics and for that tube sound people talk about.

I'm going into this half blind and it's overwhelming the amount of knowledge that you need to know to get into this hobby i feel. Any dac/amp recommendation would be greatly appreciated and maybe a point in the right direction my budget is 500$ Thank you.

Don't get a hybrid tube amp for planars. It adds too much distortion.
Also most of the cheap ones simply don't put out enough watts... you need to drop a lot of cash on a very powerful, high-end variant for 'planar synergy'.

To get the most out of a planar, you need to be pushing at least 2 watts of the cleanest power into it, ideally around 3-4 watts.
Leave the dirty tube amps to dynamic drivers.
