Hey there! I'm a music producer in need of a good headphone for mixing and mastering.
Unfortunately, I can't use studio monitors because I can't acoustically treat my space right now.
So I need your help in choosing between two options: Sennheiser HD 6xx and Beyerdynamic DT 900 Pro X.

I want to make sure I pick the right one that's accurate and neutral so I can make good mixes

Have you considered the DT880?

Have you considered the DT880?
Short answer:
I have, however I am more inclined towards the DT 900 Pro X, because it has low impedance and basically the same performance if not even better than the DT 880 (the treble spike is supposedly not as harsh), plus the detachable cable feature.

About impedance of DT880, DT900, HD6xx :
As far as I know the 32ohm version of the DT 880 performs significantly worse and there is no option for 80ohm, only 250 and 300, which my audio interface wont be able to power properly.
Why do I even compare DT 900 Pro X with HD 6xx, since 6xx has an impedance of 300ohm?
I am curious what people think about this particular model of Sennheiser, is it better. I might consider buying it with a dac+amp to power it.
On paper Sennheiser is supposed to be much more flat/neutral, but the soundstage is worse as far as I know.

My quick take is the 900 is the more engaging and fun set, but the 600 wins out in midrange, and gets even better on a tube amp. But I've owned them at different times with different setups.

I'm a bit confused here. OP asked DT900 vs HD6xx and was recommended to try DT880, which is what I was going to suggest as well, but OP shoots down the DT880 as his gear cannot drive high impedance properly. The HD6xx is also high impedance, so if your gear cannot properly drive the DT880 it will fail withe Sennheiser as well, not to mention that the HD6xx has a significant mid bass bump, rolled off sub bass and is kinda veiled souding as well.

Another option would be the AKG K240 Studio, but he DT880 would be my first choice.

I can manage DT700 Pro X, but DT 900 is quite harsh for me.

Not sure what your budget is, but have you considered NDH-30/S5X? Or if you want something new, MDR-MV1?

Btw I am new to studio headphones, so I am just quoting stuff I read on the internet, I dont have the option to try them on in person before buying.

As I said before my main interest is mixing and mastering.

okay but the DT 700 Pro X is closed back, it can not be better for mixing and mastering.
A headset like DT 700 Pro X is mainly for tracking

I did address the impedance issue earlier in the replies:

However, why do you recommend the DT 880 over DT900? Be more specific, you are just saying DT 880 is better than DT 900 without explaining why.

Wasn't implying you should use it. I was just pointing out compared to its counter part, DT900 Pro X is quite harsh.

Another neutral contender, made specifically for pro studio mixing, is the ATH-R70X, which is incredibly comfortable, very clear, very natural. I wear them many hours per day and sometimes forget they're on my head.

There are a zillion reviews of the ATH-R70X and I agree heartily with this one, which basically says they are an improved answer to the HD600.

They also have their own Head-Fi impressions page, which is quite long at this point.

Best EU price is probably from Thomann.

It is high impedance, 470 ohm. But you don't have to spend that much on an amp. I run mine just fine out of the VE Megatron, which is only $56 shipped to the USA. See if they ship to Greece.

Reviewed here specifically with ATH-R70x: https://twister6.com/2022/05/05/venture-electronics-ve-megatron/2/
