I visited several stores looking to test out
several headphones that might work out best for me. One store told me the
Sennheiser PX 100 has been discontinued. Anyone know
if this is true?

WHAT! I need to buy one before they run out in stock in online stores. If its true i wonder why? Its like their best selling headphone.

I thought it the best selling also. I could not help but wonder maybe
he just said that because they didn't have any in stock.

Still listed on Senn's website so I have no reason to believe it has been discontinued. Salesmen are generally lieing when their lips are moving, and I'm sure the gentlemen would have been happy to recommend another fine product to you instead, perhaps one which his employer coincidentally had in stock at the moment...

I've had audio salesmen tell me this before in reference to other gear. Don't believe it.
