just FYI I use a Shure SM57 mic to record and I love it, it's a workhorse. But I run screaming from their IEMs - I just can't stand in ear monitors. But I'm Shure they sound very nice.
Sure, Sennheiser makes some great mics. A friend of mine records his organ with three Sennheiser mics. And the recordings sound just great... on my Grados.
The only mics I've ever used to record the organ at my church with are a couple of Audio-Technica condenser microphones that have a razor-flat frequency response, in my opinion, as any good mic should.
