Off the top of my head Gold plated plugs are generally used for consumer products, because they resist oxidation better than any other metal and consumers percieve gold-plated connectors to be better. Nickel plated plugs are generally used for professional products because it is a harder metal that won't scratch or mark as easily as gold, and the constant plugging and unplugging in a studio prevents oxidisation.

Mind you that the ultra-thinnish gold layer on el cheapo gold plated connectors rubs off pretty quickly with use - usually to reveal a nickel layer beyond, which is there to prevent the gold from diffusing. The better ones are hard gold plated.
